Seal Beach’s tiny 320 MAIN set the standard in Orange County for cutting edge, creative mixology.  Owners Jason & Rebecca Schiffer have all but perfected the art of re-imagining popular cocktail recipes, brilliantly utilizing the latest technique or ingredient, all the while tinkering with the standard cocktail repertoire that speaks comfortably to their very loyal clientele. As example, Schiffer’s Antique Lemondrop was recently assessed by a spirits writer as “…a marvel of cocktail subtlety, taking a rather maligned modern sipper and transforming it into a bold expression of flavors.” 320 MAIN’s cocktail program is respected and acclaimed throughout Southern California, with imitators now offering homage on cocktail menus across the U.S.

In an effort to elevate the food offerings to the tremendous level of the drinks menus, the Schiffers recently appointed Chef Jaime Carrano, who now brings a similar aesthetic to the kitchen of 320.  An alum of the prestigious kitchens of Thomas Keller (Bouchon Beverly Hills) and Charlie Palmer (New York City’s acclaimed Aureole & opening team of Charlie Palmer at South Coast Plaza), Chef Carrano’s new menus speak to the successful ideas behind the drinks program, as well to a longstanding group of highly valued, regular customers.  Chef Carrano offers a new menu of bar snacks that present a festive atmosphere for sharing, with an approachable “Buffalo Chicken Tenders with Point Reyes Bleu” competing for attention alongside a classic “Pate, bacon wrapped, with purple mustard, red wine prunes, and grilled bread” and “Bone Marrow with braised oxtail, pickled red onion.”  Starters might include a rich “Pork Belly Mac & Cheese” or “Grilled Octopus Salad with white beans and pickled jingle bell peppers.”  Similarly, dinner selections speak to those in search of comforting foods – “The 320 Burger with braised pork, fresh ground beef, mojo sauce, and gruyere,” as well as the adventurous – “Duck Pot Pie with duck confit, sweet potato, carrot, celery root, and puff pastry.”

The new 320 MAIN American Eatery & Drink House continues to offer the area’s happiest daily Happy Hours, with revolving food and drink specials, book signings by esteemed mixologists and drinks writers from around the world, and special events such as the very popular “320 Mug Club” which provides $2 off drinks anytime, $5 off during Happy Hour.  As well, Chef Carrano has recently launched “Sunday Suppers,” with rotating weekly “comfort food” specials for the entire family.
